7: Make the Custard

Heat milk and vanilla in a saucepan.

Bring just to a simmer.

Meanwhile whisk:

  • Egg yolks
  • Sugar
  • Cornstarch

Mix until pale and smooth.

Slowly pour warm milk into the egg mixture while whisking continuously.

Return everything to the saucepan.

Cook over medium heat.

Whisk constantly.

Within several minutes the mixture thickens dramatically.
