Step 7: Bake

Bake for 25–30 minutes.

The cakes are ready when:

The tops are golden
A toothpick inserted in the center comes out clean
The sponge springs back when touched lightly

Avoid opening the oven during the first 20 minutes.

Step 8: Cool the Cakes

Remove from the oven.

Allow the cakes to cool for 10 minutes in the pans.

Run a knife around the edges.
