These are my most popular cookies. I usually make at least 500 of these at Christmas. Bake for 20 minutes.
Reduce oven temperature to 350Β°F (175Β°C).
Continue baking for 10–15 minutes.

The pastry balls should be:

Golden brown
Crisp on the outside
Hollow inside
Important Rule

Do not open the oven door during the first 20 minutes. Sudden temperature changes can cause the pastries to collapse.

Cooling

Once baked:

Remove from oven.
