To test:

Place a small spoonful on a cold plate.

If it wrinkles when pushed with your finger, it is ready.


Step 6: Strain the Jam

For a smooth filling:

Pass the hot mixture through a fine sieve.

Discard seeds.

Return strained jam to the pan and cook another 5 minutes if necessary.

Allow to cool completely.

Transfer to a piping bag.

Refrigerate until needed.
